Pani Puri Pani

Ingredients

  • 1 Bunch of Mint
  • 1 Bunch of Cilantro
  • 3-4 Jalapeno
  • Black Salt to taste
  • Salt to taste
  • Everest Pani puri Masala
  • Water
  • 2 lemon juice

Directions

  • Sperate mints leves from bunch wash them properly.
  • Roughly chop Clintro, Jalapeno and mint leaves.
  • Add 1-2 Cup of water in grinter and mix all the ingredients and make puree.
  • Strain the mixture of mint,Clintro and Jalapeno and add it to chilled water approximately 3-4 liters.
  • Add 2 lemon juice and add salt, black salt and pani puri masala( Half Packet) according to the taste.

  • Add Jalapeno according to spice level.
  • Make this pani a day before party so it allows the flavors to get mixed properly .

Chorafari Chutney

Ingredients

  • 1Tbsp Besan
  • 2Tbsp yogurt
  • 1Cup Phudina leaves
  • 1/2 Cup Cilantro
  • 4-5 Chillies according to spice level
  • Salt to taste
  • 1Tbsp oil
  • 1-2 Cup Water

Directions

  • Take 1Tbsp of gram flour ,mix it with 2Tbsp of yogut.
  • Heat 1Tbsp of oil in a pan and add the gram flour mixter and cook it for 1min
  • Add 2 Cup water and cook it until its think approx.10-15mins. Add more water if needed.
  • Adjust the thickness accordingly
  • Take 1cup mint leaves,1/2 cup Cilantro znd 3-4 green chilies and bldnd them it paste.
  • Add this paste to the mixture and cook it for 3-5 mins
  • Add salt according to taste
  • Sever hot or chill

  • Add water according to the thickness you want.
  • Also you can add more Chillies if you like it spicy.
  • I like to server chilled.

Jalapeno Cheese Chimes/Samosas

Ingredients

  • 1/2 Cup Cream cheese
  • 1/2 Cup Amul cheese
  • 1/4 Cup Parmesan cheese
  • 1Tsp Fresh Jalapeno
  • 1Tsp Parsley
  • 3 Tortillas cut in half
  • 1Tbsp Cilantro
  • All purpose flour slurry

Directions

  • Take 1/2 Cream cheese add 1tsp fresh Jalapeno, 1tsp parsley.
  • Mix them properly
  • Add 1/4 cup Parmesan, 1/2 cup Amul cheese ,add 1Tbsp cilantro and mix them well.
  • Make cone from tortillas using all purpose floor slurry
  • Fill 1 to 2tsp of stuffing in each tortilla cone and seal them with all purpose flour slurry.
  • Bake the at 350° for 15-20 mins, until they turn goldern brown.

  • Jalapeno can be add more or less according to spice level.
  • Also you can cut down on cream cheese to 1/4 cup if want more cheese.
  • Any brand tortillas can be used.
  • It can be also deep fry at low to medium flame until they turn goldern brown.

Ingredients

  • 1Tbsp Cashews
  • 1 Tbsp Melon Seed ( Magatri)
  • 1Tbsp Cardamom seeds / Powder
  • 1Tbsp Rasins
  • 1, 1/2 Tsp Fennel seeds/ Powder
  • 1,1/2 Tsp poppy seeds
  • 1,1/2 -2 Tsp Gulkand
  • 1 Tsp pepper corn
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Kesar strands , Soak them in 1Tbsp of warm Milk
  • 15-18 pieces of Almonds
  • 15 -18 pieces of pistachio
  • 4 Cup milk
  • 2, 1/2 cup water ( Optional)
  • 1/2 tsp Nutmeg powder

Directions

  • Heat 3 cups of milk until it comes to one boil
  • Blend each spice seperately or blend them together and make a fine powder.
  • Mix that powder to hot milk.
  • Add saffron milk and 1,1/2-2 tsp of Gulkand.
  • Add 1,1/2-2 cups of water and mix it well.
  • Refrigerate it for 4-5 hours and server chilled.

Adding water is optional. For better result leave it overnight in refrigerator and server chillied.

Cheese Corn Balls

Ingredients


  • 1,1/2-2 Tbsp butter
  • 1/2 Cup crused American corn
  • 1/2 Cup Milk
  • 5 Tbsp Fresh bread crumbs
  • 1/2 Cup Amul Cheese
  • 2 Tbsp All purpose flour ( Maida)
  • 1 Tsp Oregano
  • 1Tsp Dried Parsley
  • 1 Tsp Dried Basil Leaves
  • 1 Tsp Chilli Flakes
  • Salt to Taste
  • 2 Tbsp chopped Cilintro

Other Ingredients*
  • All purpose flour Slurry ( Maida Slurry)
  • Breadcrumbs to Coat
  • Oil to Fry

Directions
  • Heat the pan and add 1 1/2 – 2 tablespoons of butter.
  • Add 1/2 Crused Corn and Satue them in butter until you smell the aroma. Approx. 2 -3 Mins
  • Add 2 Tbsp of all purpose flour and cook it for 2 mins .
  • Add 1/2 Cup of milk and cook until the mixture gets lumpy.
  • Transfer the mixter to bowl and wait until it reached to room temperature.
  • Now add 5 tbsp of fresh breadcrumbs, 1tsp chilie flakes, 1tsp Oregano, 1tsp dried parsley, 1tsp dried basil, 1/2 Cup Amul cheese and salt as per taste.
  • Mix them all and prepare a soft dough . Make small balls according to size you like.
  • Heat the oil for deep frying
  • Dip each ball into all purpose flour slurry and roll then into the breadcrumbs and deep fry them at medium flame until they turn golden brown.

  • I have used fresh corn cob. Frozen corn can be used too.
  • To make fresh breadcrumbs. Take 3 bread slices microwave for 2 mins and blend them in processor.
  • I have used regular breadcrumbs to coat the corn balls .
  • Instead of frying you can bake them in oven at 350 Degrees for 15-20 mins.
